Indian Streetfood Peanuts

Streetfood is all the rage nowadays. Food trucks are everywhere. But India was centuries ahead of this trend. Eating on the roadside is a national pass-time in the homeland. Streetfood Mungphali (peanuts) served hot in a newspaper cone is among the best (right up there with the biryani from that cart in mid-town manhattan). My sister Swati shares this quick and nifty recipe she got from our mom. If you can’t find a newspaper, just don’t serve it on your iPad. Ingredients
1 tbsp oil
1/2 medium red onion diced
1 small thai green chili diced
1 canister Spanish peanuts
1/4 tsp salt (to taste)
1/2 tomato diced
1/4 cup cilantro
juice of 1/2 lime (squeeze to taste)

Cook
Batter
1. Heat pan on medium flame and add oil
2. Add onions and chili and saute for a 1-2 minutes, keeping onions crunchy.
3. Mix in peanuts and salt and saute for another few minutes (peanuts should soften slightly).
4. Turn off flame, mix in tomatoes, cilantro and lime.
5. Serve and enjoy!
