Band Gobi Mattar/Cabbage Peas Sabzi

Cabbage is a very under-rated vegetable. I mean, when was the last time you said, “OMG, the cabbage was so incredible?” Well, you’ve obviously never had it Indian style. So if the only way you’ve had it is at a picnic in coleslaw (which I love, especially from KFC), or as saurkraut, here’s a recipe that may blow your mind. Which brings me to my next point…all you Desies (or is the plural of Desi, Desis?) are probably saying “Pattha Gobi gas karthi hai.” My friends, that’s what Hajmola is for!

2 tbsp ghee or oil
1 inch ginger, grated or diced
1/2 green chili, diced
1/2 large cabbage, sliced into medium strips
3/4 cup peas
1/2 tsp cumin seeds
1/4 tsp coriander powder
1/4 tsp turmeric powder
1/4 tsp chili powder
1/2 tsp salt

1. In a large frying pan, heat ghee on medium-hi
2. Add ginger and brown
3. Add green chilies and stir for 15 seconds
4. Add cumin seed
5. As soon as seeds start to pop, mix in coriander, turmeric and chili powder
6. Add cabbage, peas, salt and chilies
7. Cover and cook over a moderate heat for about 8 minutes
8. Stir in pan before serving and enjoy!
