Yogurt Cucumber Kheere ka Raita Indian Recipe

Cucumbers were served with every meal when I was growing up. Sometimes served in raita, sometimes served sliced in rounds with salt, pepper, and a bit of lemon juice drizzled on top, and other times…I was simply handed a half a peeled cucumber to munch on. It was a great off-set to the hot dogs I devoured earlier in the day. Cucumbers are an important part of an Indian meal as they serve as a cooling agent to all the spiciness.

½ cup plain yogurt
½ large cucumber peeled
A few cilantro or mint leaves as garnish
Pinch of toasted cumin powder
Pinch of chili powder
¼ tsp salt

1. Dry toast cumin seeds in a wok or small pan.
2. Crush the seeds into a powder using mortar pestle and set aside.
3. In a medium serving bowl, add yogurt.
4. Grate cucumber into the bowl and gently mix.
5. Fold in salt.
6. Sprinkle cumin powder and chili powder into mixture.
7. Add additional cumin powder and chili powder on top if desired.
8. Garnish with mint or cilantro leaves.
