Chai. What can I say, but since the day my little sister was born, my parents and I waited for her to grow old enough to make her first cup of chai (around 8), so one of us wouldn’t have to get off the couch to make it. Now that I have two daughters of my own, I patiently wait for my sister to pass the baton on to one of them. I have to admit, I have a very hard time getting my head around Indian people who don’t drink chai (like my sister-in-law and my brother-in-law, both perfectly nice people in every other way). If you’d like to get on my good side, offer me a cup of chai–but don’t screw it up. Nothing worse than a bad cup of chai, except for maybe a bad glass of wine.

Ingredients
1 cup water
½ tsp black tea leaves (or 1 teabag )
~1/4 cup milk

Cook
1. Bring water to boil in a small saucepan.
2. Add tea leaves and boil for 30 seconds- 1 minute.
3. Add milk and bring to a boil.
4. Strain into a mug, add sugar to taste (or not) and enjoy!
